How tampering with data — not just product — is becoming a food-safety threat, and what controls detect it.

Executive summary

Food fraud has always been about deception, but the ledger is now digital. When batch records, temperature logs and test results live in software, altering the data becomes a route to passing off unsafe product as compliant.

This research examines cyber-enabled adulteration: the scenarios, the warning signs, and the integrity controls — tamper-evident logging, separation of duties, out-of-band verification — that catch it.

It argues that food safety and cybersecurity are converging, and that the teams responsible for each need to be in the same room.
